ペルーの代表的料理のセビーチェ。いわゆる、お魚のマリネ。カルパッチョよりももっと、色々入って、ライムと唐辛子の組み合わせが、爽やかで大好き!お刺身の残りで作るのが定番だけど、冬に困るのが・・・生唐辛子が無い!!タカの爪では、力不足・・・。瓶詰のハラペーニョで作ったりしていたのだけど、すばらしい味方を見つけちゃいました〜!”柚子胡椒”です。キリリとした辛さと、気持ちのいい香りは、このマリネにぴったり!!ついでに香菜も紫蘇に変えて、ごま油とゴマでNIPPONバージョンにしたら、万人受けなお皿になったのです
